Today is Mothering Sunday, so I thought I would share a simple yet thoughtful idea for a homemade sweet treat. My Mum always loved the blue quality street and so I decided to try making my own version for her. These vegan chocolate coconut bites combine just a few ingredients but are far more than the sum of their parts – and mean more than any mass produced Mother’s Day gifts you might find in the shops as you’ve given the best gift of all: time. To make them, you will need:
120g dark/ vegan chocolate
120g desiccated coconut
2 tbsp cold extra virgin coconut oil
1 tbsp honey (or agave syrup)
Vanilla extract, to taste.
Line a glass dish – 4 x 12 cm. Whizz the coconut, coconut oil, honey and vanilla in a blender. Work the mixture with your hands until it is a sticky texture but comes together in your hands.
Using your hands, press the mixture into the dish, so that you have a flat layer of coconut mixture.
Melt the chocolate in short bursts in the microwave (this has the effect of tempering, but be careful not to burn it!) then pour over the coconut and leave for at least two hours to set.
When cool and firm, remove from the dish and cut into bars or bitesize pieces.
