With Mabon this week, and October round the corner, I thought it was high time for a pumpkin-themed bake. These pumpkin spice pecan cookies are Autumn in every mouthful. They are a cakey-type of cookie, almost a whoopee-pie texture if you’ve ever had one of them. Perfect with a flask of tea on an Autumn walk. To make them, you will need:

50g pumpkin purée
60g butter
75g soft brown sugar
1 tsp cinnamon
1/4 tsp cardamom
125g S-R flour
75g pecan nuts, chopped
4 tbsp milk

Cream the butter and sugar until light and fluffy. Add the pumpkin purée and the spices, followed by the milk. Add the flour and mix briefly until a rough dough forms, then fold in the pecan nuts. Put in the fridge to chill and firm up for around half an hour.

Preheat the oven to 160C Fan. Divide the mixture into teaspoon-sized balls, placing evenly apart on a lined tray. They won’t spread too much as they bake. Bake the cookies for 12 – 15 minutes. Leave to cool on the trays.
