Greengage and Almond Cake

Greengages are the sweeter sibling of the plum: bitesized morsels of early Autumn goodness, they have a short season – just now – and are well worth trying to get your hands on them. Like plums, they pair well with almonds and so this greengage and almond cake was born; an upside down cake cooked with the caramelised fruit on the bottom and inverted to serve.┬áIf you can’t find greengages, you could make it with plums – enough to cover the base of your tin. To make the cake, you will need:

For the topping:
12 greengages, chopped in half
Knob of butter for greasing
1 tbsp soft brown sugar
2 tbsp flaked almonds
For the cake:
120g butter
60g soft brown sugar
60g caster sugar
70g self-raising flour
50g ground almonds
1 tsp almond extract
2 eggs
2 tbsp milk.

Preheat the oven to 160C fan/ 180C. Cream the butter and sugar, then add the almond extract along with the eggs, alternating with a little flour after each. Fold in the rest of the flour and the almonds. Loosen the batter with the milk.

Grease and line a 20cm round tin, then grease on top of the grease proof base generously with a knob of butter. Sprinkle with the soft brown sugar and flaked almonds. Cover with the greengages, cut side down. Top with the batter and bake for 45 – 50 minutes until cooked through.
