Sticking with the theme of classic bakes with a twist while we wait for the “hungry gap” to abate in the UK, I thought I would experiment with a classic coffee cake. This coffee and cardamom loaf cake combines coffee with aromatic cardamom, which gives a subtly warming kick that has been perfect for this week! To make it, you will need:
120g soft, light brown sugar
120g butter
120g self-raising flour
2 eggs
1 tsp baking powder
One tbsp yoghurt
1 tbsp instant coffee powder
1 tbsp boiling water
1 tsp ground cardamom
Cream the butter and sugar until light and fluffy. Make a paste from the coffee, boiling water and yoghurt and add to the mixture along with one of the eggs and a little flour, then beat together briefly. Add the other egg and the rest of the flour and baking powder. Bake for 35 minutes at 160C Fan/ 180C until a skewer inserted in the middle comes out clean. Cool in the tin for 10 minutes then remove to cool fully on a wire rack.
Make the icing from 1/2 tsp instant coffee powder and 50g icing sugar mixed with a couple of teaspoons of water to a thick dropping consistency and drizzle over the top of the loaf cake. Serve with more coffee!
