Chocolate and Cardamom Hot Cross Buns

This Easter is going to be a very different one to say the least. To me, it’s not Easter without hot cross buns, so in the spirit of keeping calm and carrying on and appreciating the small things each day, here’s my virtual Easter offering to you: chocolate and cardamom hot cross buns. I adapted the original recipe, via Benjamina Ebuehi (of GBBO fame) so it has no eggs and less flour, making half a dozen spiced chocolate chip buns, topped with a cardamom glaze and signature crosses. If you’re lucky enough to have bread flour, use that, but you could also make them with plain flour – they will have a slightly softer crumb. To make them, you will need:

180ml whole milk
30g unsalted butter
6 – 8 crushed cardamom pods
250g white bread flour
38g caster sugar
4g instant yeast
1/2 tsp salt
1 tsp cinnamon
1/2 tsp mixed spice
75g chocolate chips.
For the cross topping:
40g plain flour
2.5 tbsp water
For the glaze:
100g caster sugar
75ml water
1 small cinnamon stick
1/2 a nutmeg, grated
2 cardamom pods
1/2 tsp vanilla extract.

Mix together the strong flour, sugar, spices, instant yeast and salt. Warm the milk to body temperature and pour into the dry ingredients.

Mix together until you have a rough dough, then knead for 10 minutes (you can use a stand mixer).

The dough will be sticky but try not to add too much flour. Instead you can wet your hands a little to knead – I find this works better! Once kneaded, leave the dough in a bowl, cover and store in a warm place for one hour or until doubled in size. Once risen, punch the dough back down and add your chocolate chips, folding the dough to incorporate them.

Divide the dough up equally into six pieces. Roll into tight balls and place on a baking tray, leaving space between them. Cover with a clean tea towel and leave to rise for 45 mins to one hour. Preheat the oven to Gas 6/ 200C. Once risen, make the cross topping by mixing the plain flour and water to a thick paste and popping it in a piping or food bag. Snip a small hole in the end and pipe in one direction, then the other to make your crosses. The trick is to work quickly and not to hesitate.

Bake for 25-30 minutes. Meanwhile, make the glaze. In a saucepan, heat the sugar water, spices and vanilla. Bring to the boil until the sugar dissolves, then leave to cool.

While the buns are still warm, brush the glaze liberally over the top.

Eat while they’re still warm. Any leftovers are delicious the next day toasted with extra butter and you can freeze them too.
