Blood Orange Melting Moments

Melting moments, Viennese whirls – whatever you call them, buttery, moreish biscuits are sheer baking comfort. These blood orange and vanilla melting moments combine a rich, zesty biscuit with a blood orange buttercream, balanced with sweet notes of vanilla. To make them, you will need:

150g butter
50g icing sugar
150g self-raising flour
Zest 1/2 blood orange
1/2 tsp vanilla extract
For the buttercream:
25g butter
55g icing sugar
2 tsp blood orange juice
Few drops vanilla extract
Zest 1/2 blood orange

Cream the butter and icing sugar until very light and fluffy – around five minutes – then and add flour, blood orange zest and vanilla extract and mix again until the mixture comes together into a dough. Roll into walnut-sized balls and flatten them with a fork dipped in cold water.

Chill for 30 minutes, meanwhile preheat the oven to 160C Fan. Bake for 15 minutes, then remove and allow to cool completely on a wire rack.

Cream the butter, icing sugar, blood orange juice, vanilla extract and orange zest until you have a light, fluffy buttercream. Sandwich between the biscuits once you’re ready to eat them.
